Vineyard Notes
This 100% Syrah comes from Block 6 of the Calcareous Vineyard, affectionately known as Devil's Canyon due to the steep southwest exposure and intensely chalky soil. Planted with the famed Estrella Clone that made Paso Robles known for Syrah, this unique combination of site and varietal demands its own bottling.
Production Notes
Hand harvest and then sorted de-stemmed and immediately. The whole berries were placed in open top 4 ton concrete fermenters outside just a stones throw from where they were grown. Pumped over twice a day during initial intense primary fermentation, then moved to punch downs once it was essentially dry. Allowed to macerate on skins for a total of 16 days, a bit longer than our typical maceration times, then drained and pressed. All fractions combined in tank and allowed to settle for 3 days. Racked to barrels, 45% of which were new French oak and aged for 21 months before bottling with just a single racking.

Toasted oak notes combine with wonderfully juicy tannins to create the perfect lingering flavors just begging for braised spareribs.
